Super Seashell Salad

A vibrant and crunchy seafood salad featuring seashell pasta, fresh vegetables, eggs, and tangy bleu cheese dressing, perfect for light lunches or summer gatherings.

Ingredients

  • 3 1/2 c. Skinner seashells
  • 2 c. sliced raw cauliflower
  • 1 1/2 c. frozen peas, thawed and drained
  • 1 c. chopped celery
  • 1 c. thinly sliced radishes
  • 2 hard-cooked eggs, sliced
  • 1 c. Bleu cheese dressing
  • 2 Tbsp. finely chopped green onion
  • 1 Tbsp. salt

Instructions

  1. Cook the seashells according to package directions.
  2. Drain well and let them cool.
  3. Rinse with cold water to cool quickly, then drain well.
  4. In a large bowl, combine the cooled seashells, sliced cauliflower, thawed peas, chopped celery, sliced radishes, and sliced hard-cooked eggs.
  5. Add the bleu cheese dressing and gently toss to coat.
  6. Sprinkle with finely chopped green onion before serving.
