A moist and flavorful banana bread with pecans, perfect for breakfast or snack, blending sweet bananas with crunchy nuts and a hint of vanilla.

Ingredients

  • 1 tsp. baking soda
  • 1/2 c. sour cream
  • 1 c. sugar
  • 1 stick margarine
  • 2 eggs
  • 3 to 4 bananas
  • 1 tsp. vanilla
  • 1 1/2 c. flour
  • pinch of salt
  • 1/2 c. pecans

Instructions

  1. Mix baking soda and sour cream by hand and set aside.
  2. Cream sugar, margarine, and eggs until the sugar is absorbed.
  3. Mash bananas and vanilla, then add to the creamed mixture.
  4. Gradually add flour and salt, then fold in pecans.
  5. Stir in the sour cream mixture and pour into greased loaf pans.
  6. Bake in a preheated oven at 325° to 335°F for 1 hour.
  7. Let cool before removing from pans.
