Ingredients

  • 2 cups cooked and drained squash
  • 1 small onion, chopped
  • 1 carrot, grated
  • 1 cup sour cream
  • 1 can cream of chicken soup
  • seasoned croutons
  • Ritz crackers

Instructions

  1. Place seasoned croutons in the bottom of the casserole dish.
  2. Mix cooked and drained squash, chopped onion, grated carrot, sour cream, and cream of chicken soup together.
  3. Spread the mixture over the croutons in the casserole dish.
  4. Top with crushed Ritz crackers and melted butter.
  5. Bake at 350°F for 30 to 40 minutes until bubbly and golden.
