Ingredients

  • 3/4 cup sour cream
  • 1 small onion, grated
  • salt
  • pepper
  • 2 strips bacon
  • 2 large green olives
  • 2 tablespoons blue cheese

Instructions

  1. Combine sour cream, grated onion, and 1 teaspoon of salt in a bowl.
  2. In a frying pan, cook bacon until crisp, then cut into 1/4-inch pieces.
  3. Discard all but 1 teaspoon of bacon fat from the pan.
  4. Cut each green olive into quarters.
  5. Shape blue cheese into 6 small balls.
  6. Combine ground beef with 1/4 teaspoon salt and 1/4 teaspoon pepper.
  7. Shape the beef mixture into 20 small balls.
  8. Make an indentation with your thumb in each beef ball and place a piece of bacon, olive quarter, or blue cheese ball inside.
  9. Press the beef around the filling to seal each meatball.
  10. Saute the meatballs in bacon fat over medium heat until browned, about 10 to 15 minutes.
  11. Drain the meatballs and serve with the sour cream mixture.
