- Combine sour cream, grated onion, and 1 teaspoon of salt in a bowl.
- In a frying pan, cook bacon until crisp, then cut into 1/4-inch pieces.
- Discard all but 1 teaspoon of bacon fat from the pan.
- Cut each green olive into quarters.
- Shape blue cheese into 6 small balls.
- Combine ground beef with 1/4 teaspoon salt and 1/4 teaspoon pepper.
- Shape the beef mixture into 20 small balls.
- Make an indentation with your thumb in each beef ball and place a piece of bacon, olive quarter, or blue cheese ball inside.
- Press the beef around the filling to seal each meatball.
- Saute the meatballs in bacon fat over medium heat until browned, about 10 to 15 minutes.
- Drain the meatballs and serve with the sour cream mixture.
