Ingredients

  • 2 Tbsp. butter
  • 2 medium onions, chopped
  • 2 carrots, chopped
  • 8 c. beef stock, heated
  • 2 1/2 Tbsp. tomato paste
  • 2 c. lentils, washed
  • 1 clove garlic
  • 1 Tbsp. chopped parsley
  • salt and pepper

Instructions

  1. Heat butter in a large saucepan over medium heat.
  2. Add chopped onions and carrots and cook for 5 minutes.
  3. Add heated beef stock and tomato paste to the saucepan.
  4. Mix well and season with salt and pepper.
  5. Stir in washed lentils, minced garlic, and chopped parsley.
  6. Bring the mixture to a boil.
  7. Reduce heat to low and simmer for 1 1/2 hours, partly covered.
