A vibrant, sweet and creamy pasta salad featuring pineapple, marshmallows, cherries, and coconut, perfect for parties, picnics, or as a refreshing dessert treat.

Ingredients

  • 1/2 cup acini de pepe
  • 1 teaspoon salt
  • 1 tablespoon cooking oil
  • 1 (15 1/4 oz.) can crushed pineapple with juice
  • 1/4 cup powdered sugar
  • 1 cup miniature marshmallows
  • 20 maraschino cherries, chopped
  • 1 (3 1/2 oz.) box instant vanilla pudding
  • 1 cup coconut
  • 1/2 cup chopped pecans

Instructions

  1. Put acini de pepe, salt, and oil in boiling water.
  2. Cook until tender, about 10 to 12 minutes.
  3. Rinse and drain the pasta.
  4. Cool to room temperature.
  5. Add pineapple, sugar, marshmallows, and cherries to the pasta.
  6. Sprinkle pudding mix over this and mix lightly.
  7. Add coconut, pecans, and Cool Whip; fold in lightly.
  8. Refrigerate several hours before serving.
