Ingredients

  • 1 pkg dry yeast
  • 1/4 cup very warm water
  • 1 cup low‑fat cottage cheese (small curd)
  • 1 Tbsp sugar
  • 1 tsp salt
  • 1/4 tsp soda
  • 1 beaten egg
  • 1 1/2 cups flour, divided

Instructions

  1. Dissolve yeast in very warm water.
  2. Warm cottage cheese in a saucepan or microwave.
  3. Add cottage cheese, sugar, salt, soda, beaten egg, and 1/2 cup flour to the yeast mixture.
  4. Beat for 2 minutes with a wooden spoon or mixer.
  5. Turn dough onto a floured board.
  6. Knead for 10 minutes.
  7. Place dough in a greased bowl, turning to coat all sides.
  8. Cover and let rise in a warm place for 1½ hours.
  9. Punch down the dough.
  10. Divide dough into 12 equal parts.
  11. Shape each part into a ball.
  12. Place balls in a 9‑inch round baking pan sprayed with vegetable pan spray.
  13. Cover and let rise for 30 minutes.
  14. Bake at 350°F for 20 minutes.
