Ingredients

  • 2 lb. beef stew meat
  • 2 Tbsp. oil
  • 1 large onion, sliced
  • 1 c. tomato juice
  • 1 c. Burgundy wine
  • 1 garlic clove
  • salt and pepper to taste
  • 6 carrots in chunks
  • 12 new potatoes with skins
  • 1/2 lb. fresh mushrooms
  • 1 tsp. beef bouillon

Instructions

  1. Brown the beef stew meat in oil.
  2. Add sliced onion, minced garlic, tomato juice, Burgundy wine, salt, and pepper.
  3. Cover and cook over low heat for 1 1/2 to 2 hours.
  4. Add carrots in chunks and new potatoes with skins.
  5. Simmer until vegetables are tender.
  6. Stir in fresh mushrooms and beef bouillon.
  7. Heat through and serve.
