Ingredients

  • 1 1/2 cups butter
  • 2 cups brown sugar
  • 1 teaspoon vanilla
  • 1 cup raisins
  • 1 cup nuts
  • 1 cup coconut
  • 1 cup buttermilk
  • 2 cups blackberry jam
  • 6 whole eggs
  • 1 teaspoon nutmeg
  • 1 teaspoon allspice
  • 2 teaspoons baking soda
  • 3 teaspoons cocoa
  • 4 1/2 cups all-purpose flour

Instructions

  1. Cream together the butter, brown sugar, vanilla, jam, and eggs.
  2. Sift flour together with nutmeg, allspice, baking soda, and cocoa, then combine alternately with buttermilk into the creamed mixture.
  3. Add raisins, nuts, and coconut to the batter.
  4. Take out 1 1/2 cups of batter and set aside.
  5. Pour the remaining batter equally into 3 round cake pans and bake until a toothpick inserted comes out clean.
  6. Prepare the reserved batter by mixing in 1/2 cup sugar, 1 cup brown sugar, 1/2 cup butter, and 1 cup milk; cook until thickened, then cool.
  7. Spread the thickened mixture between the cooled cake layers and on top.
  8. Frost the assembled cake with caramel frosting.
