Ingredients

  • 1 peck large green cucumbers
  • 8 medium onions
  • 6 red sweet peppers
  • 2 red hot peppers
  • 1 quart cider vinegar
  • 4 pounds sugar (2 white, 2 brown)
  • 2 tablespoons celery seed
  • 1 tablespoon mustard seed

Instructions

  1. Remove pulp from cucumbers without peeling unless ripe.
  2. Grind the cucumbers, onions, and red peppers fine using a meat grinder.
  3. Layer the ground mixture in a container, sprinkling salt between each layer.
  4. Let the mixture stand overnight.
  5. Drain the mixture well in the morning.
  6. Add the remaining ingredients: cider vinegar, sugar, celery seed, and mustard seed.
  7. Bring to a full rolling boil and cook for 10 minutes.
  8. Pack the hot relish into sterilized jars.
