Ingredients

  • 1 lb. dry beans (pinto, kidney, or October beans or a combination)
  • 1 qt. stewed tomatoes
  • 1 c. dry barley
  • 1 large onion, diced
  • 1 green pepper, diced
  • 4 stalks celery, diced
  • 6 oz. tomato paste
  • 2 Tbsp. paprika
  • 2 tsp. dry mustard
  • 2 tsp. salt
  • 1 Tbsp. raw honey
  • 3 bay leaves

Instructions

  1. Cook the dry beans and barley according to package directions in a large pot with diced onion, green pepper, and celery.
  2. Add stewed tomatoes, tomato paste, and remaining ingredients to the pot.
  3. Simmer the mixture for 45 minutes, then serve hot or cold.
