Ingredients

  • 2 large Vidalia or sweet onions, thinly sliced
  • 1/2 cup butter or margarine
  • 1 cup sour cream
  • 1/2 cup milk
  • 1/2 teaspoon dill weed
  • 1/4 teaspoon salt
  • 2 cups shredded Cheddar cheese, divided
  • 1 egg, lightly beaten
  • 1 can (14 3/4 oz.) cream-style corn
  • 1 package (8 1/2 oz.) cornbread/muffin mix
  • 4 drops hot pepper sauce

Instructions

  1. In a large skillet, sauté onions in butter until tender.
  2. In a small bowl, combine sour cream, milk, dill weed, and salt until blended.
  3. Stir in 1 cup of shredded Cheddar cheese into the sour cream mixture.
  4. Add the cheese mixture to the sautéed onions and remove from heat.
  5. In a separate bowl, prepare the cornbread/muffin mix according to package instructions.
  6. Stir the beaten egg, cream-style corn, hot pepper sauce, and remaining cheese into the cornbread batter.
  7. Combine the cornbread mixture with the onion and cheese mixture.
  8. Pour everything into a greased baking dish.
  9. Bake at 375°F (190°C) for about 40 minutes or until golden brown and bubbly.
