Ingredients

  • 1 cup vinegar
  • 2 cups water
  • 8 cups sugar
  • 3 tablespoons cloves
  • 3 tablespoons allspice
  • 2 sticks cinnamon
  • 8 pounds peaches

Instructions

  1. Mix vinegar, water, sugar, cloves, allspice, and cinnamon sticks in a saucepan.
  2. Bring the mixture to a boil.
  3. Drop in peeled, whole fresh peaches into the boiling syrup.
  4. Simmer peaches in the syrup for about 5 minutes.
  5. Pack the peaches into warm, clean jars and pour the hot syrup over them.
  6. Seal the jars.
