Sweet Potato Breakfast Biscuits are tender, flavorful treats with a hint of cinnamon, perfect for a hearty breakfast or snack, suitable for all sweet potato lovers.

Ingredients

  • 2 cups baked sweet potatoes
  • 3/4 cup butter-flavor Crisco
  • 3 to 4 tablespoons sugar
  • 1 teaspoon cinnamon
  • pinch of salt
  • 2 1/2 teaspoons baking powder
  • 3 cups plain flour

Instructions

  1. In a bowl, cut the Crisco, sugar, cinnamon, salt, and baking powder into the peeled and mashed sweet potatoes using a pastry blender.
  2. Work in 2 1/2 cups of flour until the mixture is well combined.
  3. Leave 1/2 cup of flour aside for patting out the biscuits.
  4. Turn the dough onto a floured surface and gently knead it.
  5. Pat out the dough to about 1-inch thickness using the remaining flour to prevent sticking.
  6. Cut the dough into biscuits using a biscuit cutter or glass.
  7. Place the biscuits on a baking sheet and bake in a preheated 425°F oven for 25 minutes.
  8. Optional: brush the tops with melted butter before serving.
