Ingredients

  • butter flavored vegetable cooking spray
  • 1 1/2 tsp. margarine
  • 3 c. peeled shredded sweet potatoes
  • 1 1/2 c. peeled diced Granny Smith apples
  • 3 Tbsp. minced onion
  • 1 Tbsp. brown sugar
  • 1/4 tsp. ground allspice
  • 3 Tbsp. unsweetened apple juice

Instructions

  1. Coat a large nonstick skillet with cooking spray; add margarine.
  2. Place over medium-high heat until margarine melts. Add potatoes, apples, and onion.
  3. Saute for 5 minutes.
  4. Add brown sugar, allspice, and apple juice; cook, stirring constantly, for 5 minutes or until potato is tender.
  5. Serve immediately.
