Ingredients

  • 1/2 cup soft butter or margarine
  • 1/2 cup shortening
  • 2 2/3 cups sugar
  • 4 eggs
  • 2 cups cold mashed sweet potatoes
  • 3 1/2 cups sifted all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 1/2 teaspoons nutmeg
  • 2 teaspoons baking soda
  • 1 cup chopped walnuts
  • 2/3 cup cold strong black coffee

Instructions

  1. Cream together the butter, shortening, and sugar.
  2. Add the eggs one at a time, mixing well after each addition.
  3. Blend in the mashed sweet potatoes.
  4. Sift together the all-purpose flour, salt, cinnamon, nutmeg, and baking soda; add chopped walnuts.
  5. Gradually stir the dry ingredients into the creamed mixture, alternating with the cold black coffee.
  6. Pour the batter into two greased 9 x 5 x 3-inch loaf pans and eight greased muffin cups.
  7. Bake in a moderate oven (375°F) for 1 hour for the loaves and 25 minutes for the muffins, or until tests done in the center.
  8. Cool for 10 minutes; remove from pans and cool completely.
