Sweet potato patties topped with pineapple and toasted marshmallows create a delightful combination of sweet, savory, and tropical flavors perfect for sharing at gatherings.

Ingredients

  • 3 large sweet potatoes
  • 1 cup brown sugar
  • 1 stick whipped margarine
  • 1 large can sliced pineapple
  • 1/2 bag large marshmallows
  • 1/2 bag coconut
  • 1 teaspoon vanilla flavoring

Instructions

  1. Cook sweet potatoes in peeling until done.
  2. Peel and mash the sweet potatoes. Add whipped margarine, brown sugar, coconut, and vanilla flavoring.
  3. Refrigerate the mixture overnight.
  4. Take out and form into patties.
  5. Place pineapple rings on top of each patty.
  6. Put a marshmallow in the center of each pineapple ring.
  7. Bake in the oven until the marshmallows are browned.
