- Cook sweet potatoes in peeling until done.
- Peel and mash the sweet potatoes. Add whipped margarine, brown sugar, coconut, and vanilla flavoring.
- Refrigerate the mixture overnight.
- Take out and form into patties.
- Place pineapple rings on top of each patty.
- Put a marshmallow in the center of each pineapple ring.
- Bake in the oven until the marshmallows are browned.
