Ingredients

  • 1 big turnip
  • 1 big potato
  • 1/4 cup vegetable broth
  • 1 cup onion
  • 1 cup red pepper, diced
  • 1 cup green pepper, diced
  • 1 cup corn
  • 1 teaspoon thyme
  • salt
  • pepper

Instructions

  1. Cook turnip and potato until tender; drain and remove to a bowl. Put broth in skillet.
  2. Cook onion and red and green peppers over medium heat for about 4 minutes.
  3. Add corn, turnip, and potato to the skillet; toss with thyme, salt, pepper, and 3 tablespoons parsley.
  4. Coat a heavy skillet with olive oil spray.
  5. Cover and cook over medium heat for 5 to 7 minutes, until the bottom is golden.
