Ingredients

  • 4 medium sweet potatoes
  • 1 1/2 cups sugar
  • 1 stick butter or margarine
  • 1 teaspoon nutmeg
  • 1 teaspoon vanilla flavoring or extract
  • 2 eggs
  • 1/4 cup orange juice

Instructions

  1. Wash and peel the sweet potatoes.
  2. Grate the sweet potatoes or process them in a food processor set for coarse.
  3. Pour the grated sweet potatoes into a mixing bowl.
  4. Add sugar, eggs, nutmeg, vanilla flavoring, and orange juice to the bowl.
  5. Mix well until combined.
  6. Pour the mixture into a glass baking pan or your preferred baking dish.
  7. Bake in a preheated oven at 375°F (190°C) for about 1 hour or until the potatoes are done.
  8. Remove from oven and add margarine or butter on top.
  9. Allow to cool slightly before serving.
