Ingredients

  • pecan or walnut halves
  • 3 lb. sweet potatoes
  • 3 eggs
  • 2 Tbsp. melted butter or margarine
  • 1 c. milk
  • 1 tsp. salt
  • 1/4 c. brown sugar

Instructions

  1. Boil and mash the sweet potatoes.
  2. Blend in well beaten egg yolks, melted butter, salt, and milk.
  3. Fold in well beaten egg whites.
  4. Butter a ring mold or Bundt pan.
  5. Place pecan or walnut halves around the bottom of the pan and sprinkle with brown sugar.
  6. Pour the sweet potato mixture into the prepared mold.
  7. Bake at 350°F for 45 minutes.
  8. Turn the mold upside-down onto a large plate and let stand for 5 minutes.
  9. Remove the pan carefully.
  10. Fill the ring with buttered green peas or green limas.
