A warm, sweet casserole featuring tender mashed sweet potatoes topped with toasted coconut and golden marshmallows, perfect for family gatherings and holiday celebrations.

Ingredients

  • 5 or 6 sweet potatoes
  • 1/2 cup firmly packed brown sugar
  • 1/2 cup applesauce
  • 1/4 cup melted butter
  • 2 teaspoons vanilla
  • 3/4 cup flaked coconut
  • 20 large marshmallows

Instructions

  1. Cook sweet potatoes until tender, drain and mash.
  2. Combine mashed sweet potatoes with brown sugar, applesauce, melted butter, and vanilla.
  3. Spoon the mixture into a buttered casserole dish.
  4. Bake at 325 degrees Fahrenheit for 25 minutes.
  5. Remove from oven and sprinkle with flaked coconut.
  6. Arrange marshmallows on top and bake an additional 10 to 15 minutes until marshmallows are golden brown.
