Ingredients

  • 4 cups sweet potatoes
  • 1/2 teaspoon salt
  • 1 egg
  • 6 tablespoons brown sugar
  • 2 tablespoons orange juice
  • 2/3 cup pecans
  • 6 tablespoons butter

Instructions

  1. Cook the sweet potatoes until tender and mash them.
  2. Combine the mashed sweet potatoes with the beaten egg, 3 tablespoons of melted butter, orange juice, and salt.
  3. Beat the mixture until light and fluffy.
  4. Gently fold in 1/3 cup of coarsely chopped pecans.
  5. Transfer the mixture into a buttered shallow casserole dish.
  6. Sprinkle the remaining pecans and brown sugar over the top.
  7. Drizzle with the remaining melted butter.
  8. Bake at 350°F for 30 minutes until heated through and golden on top.
