Ingredients

  • 1 tsp. margarine
  • 1/3 c. soft whole wheat breadcrumbs
  • 1/4 tsp. dried whole basil
  • 1 lb. fresh broccoli
  • 1 Tbsp. all-purpose flour
  • 1/8 tsp. salt
  • 1 c. skim milk
  • dash of ground nutmeg
  • 1/4 c. shredded Swiss cheese

Instructions

  1. Melt margarine in a small nonstick skillet over medium heat.
  2. Add breadcrumbs and dried basil; sauté for 2 minutes or until lightly toasted. Set aside.
  3. Cook the broccoli in boiling water until tender, about 3-4 minutes; drain.
  4. In a saucepan, whisk together the flour, salt, and nutmeg if using.
  5. Gradually stir in the milk, cooking and stirring until the mixture thickens.
  6. Add shredded Swiss cheese and stir until melted and smooth.
  7. Place cooked broccoli in serving dish, pour the cheese sauce over.
  8. Sprinkle toasted breadcrumb mixture on top before serving.
