Swiss Tomatoes features hollowed, seasoned tomatoes stuffed with a cheesy egg mixture, topped with breadcrumbs, and baked until golden—perfect for elegant, savory summer meals.

Ingredients

  • 6 medium tomatoes
  • salt
  • pepper
  • 2 c. grated Swiss cheese
  • 1 egg
  • 1/4 tsp. dry bread crumbs

Instructions

  1. Slice the top off each tomato and scoop out the insides, removing the pulp.
  2. Sprinkle the inside of each tomato with salt and pepper.
  3. Mix the beaten egg, grated Swiss cheese, and curry powder together.
  4. Stuff the mixture into the prepared tomatoes.
  5. Place the stuffed tomatoes in a shallow baking pan.
  6. Combine dry bread crumbs with melted butter and sprinkle over the tops of the tomatoes.
  7. Bake in a preheated oven at 400°F (200°C) for 20 minutes or until the tomatoes are soft but still hold their shape.
