Ingredients

  • 16 oz. frozen broccoli, carrots, cauliflower medley
  • 1 can cream of mushroom soup
  • 1/2 cup sour cream
  • 1/4 teaspoon pepper
  • 1 jar chopped pimentos
  • 1 cup shredded Swiss cheese
  • 1 can French-fried onions

Instructions

  1. Combine the thawed and drained vegetables, cream of mushroom soup, sour cream, pepper, drained chopped pimentos, and 1/2 cup of shredded Swiss cheese in a bowl.
  2. Stir in half of the French-fried onions and mix well.
  3. Pour the mixture into an ungreased 1-quart casserole dish.
  4. Cover and bake at 350°F (175°C) for 30 minutes.
  5. Uncover the casserole and sprinkle with the remaining shredded Swiss cheese and fried onions.
  6. Return to the oven and bake until the cheese is melted, about 5 minutes.
