Ingredients

  • 2 eggs
  • 1 cup sugar
  • 1 cup buttermilk
  • 3/4 cup oil
  • 2 1/4 cups sifted flour
  • 1/4 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 cup diced dates
  • 1 cup chopped walnuts
  • 1 cup fresh cranberries
  • Grated rind of 2 oranges

Instructions

  1. Sift dry ingredients. Stir in diced dates, chopped walnuts, cranberries, and grated orange rind.
  2. Combine eggs, buttermilk, and oil in a separate bowl.
  3. Add the wet mixture to the dry ingredients and stir until blended.
  4. Pour batter into a well-greased and floured 10-inch tube or Bundt pan.
  5. Bake at 350°F (175°C) for about 1 hour or until a toothpick inserted into the center comes out clean.
  6. Remove the cake from the pan and place on a rack.
  7. Combine 1 cup orange juice and 1 cup sugar. Pour this over the cake at least 3 times.
  8. Wrap the cake in heavy foil and refrigerate for 24 hours before serving.
