Ingredients

  • 1 (2-inch) swordfish steak
  • 2 tsp rosemary
  • 6 Tbsp butter
  • salt
  • 1/4 cup white wine
  • oil

Instructions

  1. Dredge the swordfish steak with flour and press rosemary into the fish.
  2. Brush the fish with oil.
  3. Place 5 tablespoons of butter in a large skillet and add the fish.
  4. Cook, turning once, until the fish is flaky, about 15 minutes.
  5. Sprinkle the fish with salt and remove to a hot platter.
  6. Add white wine and remaining butter to the skillet and heat.
  7. Pour the sauce over the cooked fish.
