Ingredients

  • 2 1/2 lb. squash
  • 1 small onion
  • 1 stick margarine
  • 1 1/2 cups grated cheese
  • 2 eggs
  • 1 small can Carnation milk
  • 1 package Stove Top Stuffing, cornbread style

Instructions

  1. Cook squash and chopped onion in water with a little salt until tender.
  2. Drain off excess liquid and mash the squash and onion slightly.
  3. Add margarine and 3/4 cup of grated cheese; stir until melted.
  4. Beat eggs and add milk; blend well.
  5. Add the egg and milk mixture to the squash mixture and mix thoroughly.
  6. Stir in the stuffing mix until well combined.
  7. Transfer to a baking dish and bake until heated through and golden on top.
