Ingredients

  • 1 c. bulgur wheat
  • 3 c. boiling water
  • 2 or 3 Tbsp. olive oil
  • 3 cloves garlic
  • 5 or 6 green onions
  • 1 small carton cherry tomatoes
  • 1 green bell pepper
  • 1 tsp. salt
  • 2 or 3 Tbsp. fresh lemon juice

Instructions

  1. Mix bulgur wheat and boiling water and let sit until absorbed. Drain off excess water and cool in refrigerator.
  2. When cooled, add olive oil and mix.
  3. Squeeze garlic into mixture.
  4. Add green onions, cherry tomatoes, green bell pepper, salt, and lemon juice to the bulgur mixture.
  5. Mix well and refrigerate for three to four hours before serving.
