  • 1 large cucumber, peeled, halved lengthwise and seeded
  • 1 large roasted red bell pepper (jar is fine)
  • 3 cups tomato juice
  • 1/2 cup fresh cilantro, chopped
  • 1/3 cup red wine vinegar
  • 1/4 cup olive oil
  • Tabasco sauce to taste

Instructions

  1. Cut 1 tomato and 1/2 cucumber into 1-inch pieces and transfer to a processor.
  2. Add the roasted red bell pepper and puree until smooth.
  3. Transfer the mixture to a bowl.
  4. Add tomato juice, chopped cilantro, red wine vinegar, olive oil, and Tabasco sauce to taste.
  5. Blend well and chill before serving.
  6. Serve with croutons.
