Tabouli is a refreshing Middle Eastern salad featuring cracked wheat, fresh herbs, and vibrant lemon flavor, perfect for light meals or as a side dish for gatherings.

Ingredients

  • 1 c. cracked wheat (bulgar)
  • 2 bunches parsley, chopped (leaves only)
  • 1 Tbsp. chopped mint (fresh or dried)
  • 2 bunches green onions, chopped (including green tops)
  • 1 large cucumber, chopped fine
  • 1/2 c. olive oil
  • 1/2 c. canola oil
  • 1 c. lemon juice
  • 1 tsp. salt

Instructions

  1. Soak wheat in 2 cups lukewarm water while preparing other ingredients.
  2. Chop all ingredients: parsley, mint, green onions, and cucumber.
  3. Drain excess water from the soaked wheat.
  4. Combine all ingredients with olive oil, canola oil, lemon juice, and salt.
  5. Cover and allow to set overnight.
  6. Stir again before serving.
