A fresh, vibrant Middle Eastern wheat salad combining crunchy vegetables, fragrant herbs, and zesty lemon, perfect as a light side or nutritious main dish for any occasion.

Ingredients

  • 1 c. fine cracked wheat
  • 1 bunch green onions
  • 1 bunch fresh mint
  • 1 bunch parsley
  • 3 tender cucumbers
  • 3 or 4 solid tomatoes
  • juice of 2 lemons
  • 2 Tbsp. lemon rind
  • about 1/2 c. olive oil

Instructions

  1. Combine chopped green onions, fresh mint, parsley, diced cucumbers, and chopped tomatoes in a large bowl.
  2. Squeeze excess water from the soaked wheat and add it to the vegetables.
  3. Add lemon juice and finely chopped lemon rind to the mixture.
  4. Drizzle with olive oil.
  5. Season with salt and freshly ground pepper to taste.
  6. Toss lightly with two large spoons and serve.
