- Combine chopped green onions, fresh mint, parsley, diced cucumbers, and chopped tomatoes in a large bowl.
- Squeeze excess water from the soaked wheat and add it to the vegetables.
- Add lemon juice and finely chopped lemon rind to the mixture.
