Tabuli(Wheat Salad)

A refreshing wheat salad with fresh parsley, tomatoes, and mint, accented by lemon and a hint of Tabasco, perfect for light lunches or side dishes.

Ingredients

  • olive oil
  • 2 Tbsp. lemon juice
  • 1 drop Tabasco sauce
  • 1 c. chopped parsley
  • 3/4 c. scallions
  • 4 large tomatoes, chopped
  • 1/2 c. cracked wheat
  • salt to taste
  • several fresh mint leaves (optional)

Instructions

  1. Cover the cracked wheat with boiling water and let sit for 2 hours until all water is absorbed.
  2. Mix all ingredients including prepared wheat, chopped parsley, scallions, chopped tomatoes, lemon juice, olive oil, Tabasco sauce, salt, and mint leaves if using.
  3. Refrigerate for about 1 hour before serving.
