Ingredients

  • 1 lb. ground beef
  • 1 pkg. taco seasoning
  • 1 can kidney beans
  • 1 onion, chopped
  • 1 cup salsa
  • 4 green peppers
  • 1 medium tomato, chopped
  • 1/2 cup cheddar cheese, shredded
  • 1/2 cup sour cream

Instructions

  1. In a large skillet, brown the ground beef.
  2. Drain, then stir in the taco seasoning, kidney beans, and salsa. Bring to a boil.
  3. Reduce heat and let simmer for about 5 minutes.
  4. Cut the green peppers in half and clean them.
  5. Boil the peppers in water for 3 minutes, then drain.
  6. Spoon the meat mixture into the green peppers.
  7. Place the stuffed peppers in an ungreased pan.
  8. Cover and bake at 350 degrees for 15 to 20 minutes or until the peppers are tender and the filling is heated through.
  9. Top with chopped tomatoes, shredded cheddar cheese, and sour cream.
