Ingredients

  • 1 lb. ground beef
  • 1 pkg. taco seasoning
  • 3 c. grated Colby cheese
  • 1 pkg. 6-inch flour tortillas
  • 1 can Mexican beans
  • picante sauce
  • sour cream
  • cottage cheese (optional)

Instructions

  1. Brown the ground beef in a skillet and stir in the taco seasoning.
  2. In a large round casserole dish, layer the cooked meat, then sprinkle with grated cheese.
  3. Add a layer of flour tortillas.
  4. Repeat the layers until all ingredients are used.
  5. Top with Mexican beans and picante sauce.
  6. Cover with additional cheese.
  7. Bake in the oven at 375°F (190°C) until bubbly and hot, about 20 to 30 minutes.
  8. Serve with sour cream and additional sauce if desired.
