Ingredients

  • 2 lb. lean ground beef
  • 1 (8 oz.) can tomato sauce
  • 1 egg
  • 1 (1 1/4 oz.) package taco seasoning mix
  • 1/2 cup soft bread crumbs
  • 1/2 cup chopped onion
  • 1/4 cup chopped green pepper
  • 2 Tbsp. diced green chilies
  • 1 cup shredded sharp Cheddar cheese
  • 1 cup sour cream

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine ground beef, tomato sauce, egg, taco seasoning mix, bread crumbs, chopped onion, chopped green pepper, and diced green chilies.
  3. Mix until well blended.
  4. Shape the mixture into a loaf and place it in an 8-inch round glass or plastic baking dish.
  5. Microwave on high in a combination oven-microwave or bake in the preheated oven, uncovered, for 20 to 22 minutes.
  6. Sprinkle shredded Cheddar cheese over the top during the last few minutes of baking if desired.
  7. Serve hot with sour cream and tortilla chips.
