Ingredients

  • 2/3 head lettuce, torn small
  • 2 or 3 tomatoes, chopped
  • sweet onion, chopped
  • 16 oz. can kidney beans, drained and rinsed
  • 1/2 lb. grated Cheddar cheese
  • 4 oz. Ranch dressing
  • 4 oz. Italian dressing
  • 8 oz. bag nacho Doritos, crushed

Instructions

  1. Mix all ingredients together, except Doritos.
  2. Add the crushed Doritos just before serving.
  3. Optional: add celery, cucumber, or black olives for extra flavor and texture.

Tips & Substitutions

For a fresher flavor, use homemade ranch dressing or substitute with Greek yogurt mixed with herbs. If you want to add some crunch, consider incorporating crushed tortilla chips in addition to the Doritos. For a healthier option, swap out the Cheddar cheese for a lower-fat cheese or omit it altogether. You can also try adding black beans for an extra protein boost, similar to what you'd find in many vegetarian recipes.

Serving Suggestions

Serve the taco salad as a main dish or as a side to other Mexican-inspired meals like Chilies And Rice Casserole or Light Mexican Stuffed Potatoes. Pair it with a refreshing beverage like iced tea or a light beer. For added flavor, consider garnishing with fresh cilantro or avocado slices to complement the dish's textures and flavors.

Storage & Reheating

Store any leftovers in an airtight container in the refrigerator for up to 3 days. Keep the crushed Doritos separate until you're ready to serve to maintain their crunch. To reheat, gently warm the salad (without the Doritos) in the microwave or on the stovetop, but be cautious not to overheat as it may wilt the lettuce.
