A spicy, cheesy corn bread with jalapenos and vegetables, perfect for breakfast, brunch, or as a side dish at any Tex-Mex or Southern-inspired meal.

Ingredients

  • 2 c. self-rising corn meal
  • 1 egg, beaten
  • 1/4 c. vegetable oil
  • 1 can (15 oz.) creamed corn
  • 1/8 c. jalapeno, chopped with juice
  • 1/8 c. green peppers, chopped
  • 1/8 c. onions, chopped
  • 2 Tbsp. pimento, chopped
  • milk
  • 12 oz. grated Cheddar cheese

Instructions

  1. Combine all ingredients in a mixing bowl.
  2. Add milk to achieve a thin, spoonable or pourable consistency.
  3. Pour into muffin tins or a baking pan.
  4. Bake at 450°F until lightly browned on top.
