Tips & Substitutions
For a spicier kick, consider adding jalapeños or some red pepper flakes. If you want to reduce sodium, opt for low-sodium canned beans and tomatoes. You can substitute ground turkey or chicken for the Healthy Choice ground beef for a lighter option. Adding some fresh cilantro before serving enhances the flavor significantly.
Serving Suggestions
Serve the taco soup with a dollop of low-fat sour cream and a sprinkle of shredded cheese on top. It pairs wonderfully with a side of Mom'S Mexican Cornbread(Good Crowd Pleaser) or tortilla chips for added crunch. For a fresh touch, add diced avocado or serve with a side salad to balance the meal.
Storage & Reheating
Store leftovers in an airtight container in the refrigerator for up to 4 days. To reheat, simply warm on the stove over medium heat until heated through, or microwave in short bursts, stirring in between, until hot. This soup also freezes well for up to 3 months; just thaw in the fridge before reheating.

Frequently Asked Questions
Can I use fresh ingredients instead of canned?
Yes, you can definitely use fresh ingredients! Substitute fresh tomatoes for canned stewed tomatoes, and cook them down until they break apart. Fresh beans can also be used, but ensure they are cooked beforehand. This will enhance the flavor and texture of your taco soup.
