Fajita nachos combine spicy grilled steak, seasoned beans, and melted cheese over crispy chips, topped with fresh guacamole for a flavorful Mexican-inspired snack or meal.

Ingredients

  • 1/4 cup lime juice
  • 1/4 cup olive oil
  • 1/2 cup beer
  • 2 cloves garlic
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1 fresh jalapeno chili
  • canned seasoned black beans
  • 1 pound beef skirt or flank steak
  • 1 cup shredded Cheddar cheese
  • guacamole

Instructions

  1. In a large, heavy plastic bag, mix lime juice, oil, beer, garlic, coriander, cumin, and minced jalapeno chili.
  2. Remove 3 tablespoons of marinade and set aside.
  3. Place the steak in the bag and seal it.
  4. Rotate the bag to coat the steak evenly, then set it in a large pan.
  5. Chill for at least 2 hours or up until the next day, turning occasionally.
  6. Preheat a grill to high heat so that you can hold your hand 2 to 3 seconds above the grill level.
  7. Grill the steak 4 to 6 inches above hot coals until brown and cooked to your liking, about 3 to 5 minutes per side for rare.
  8. Remove the steak from the grill and thinly slice it crosswise, then cut each slice in half again.
