Ingredients

  • 1 cup chopped onion
  • 2 teaspoons oil
  • 1 cup chopped celery
  • 1 to 2 tablespoons chili powder
  • 2 cups cooked diced beef
  • 2 cups pinto or kidney beans drained
  • 2 cups canned tomatoes
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 4 ounces corn chips

Instructions

  1. Saute chopped onion until soft in oil.
  2. Stir in chili powder and cooked diced beef; saute for 2 minutes.
  3. Add chopped celery and saute for 3 minutes.
  4. Stir in drained beans and canned tomatoes, then add salt and pepper.
  5. Spoon mixture into a 2-quart casserole dish.
  6. Bake at 350°F for 20 minutes.
  7. Top with corn chips and bake for an additional 10 minutes.
