Ingredients

  • 1 cup corn meal
  • 1 cup flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1/3 cup oil
  • 1 egg
  • 1 cup milk

Instructions

  1. Heat oven to 400°F.
  2. Pour about 2 tablespoons of oil into a cast-iron skillet.
  3. Sprinkle in a little cornmeal.
  4. Set on burner at medium heat until the cornmeal is golden brown.
  5. Combine all ingredients and mix until blended.
  6. Pour the batter into the prepared pan.
  7. Bake for 25 to 30 minutes.
