Ingredients

  • 10 to 12 lb. country ham
  • 4 cups yellow cornmeal
  • 1 cup dark brown sugar
  • 1 Tbsp. pepper
  • water

Instructions

  1. Soak the ham overnight in cold water.
  2. Drain and wipe the ham dry.
  3. Mix cornmeal with brown sugar and pepper.
  4. Add enough water to make a clay-like paste.
  5. Place the ham in a shallow baking pan.
  6. Cover the ham with the cornmeal paste, about 1 inch thick.
  7. Roast in a preheated moderate oven at 350°F for 4 hours or until the meat registers 170°F on a thermometer.
  8. Add a little boiling water to the pan but do not taste.
  9. Remove the ham from the oven.
  10. Strip off the cornmeal paste and skin.
  11. Sprinkle the ham with dry bread crumbs.
  12. Return the ham to the oven and bake until brown.
