Ingredients

  • vegetable oil
  • 3/4 c. beer
  • 3 Tbsp. mustard
  • 1/2 tsp. salt
  • 1/2 tsp. freshly ground pepper
  • 1/2 c. self-rising cornmeal
  • 1/2 c. plain cornmeal
  • 2 lb. catfish fillets

Instructions

  1. Begin heating 2 inches of vegetable oil over medium-high heat in a deep, heavy pot to 375°F.
  2. In a bowl, whisk together beer, mustard, salt, and pepper to create the batter.
  3. In a separate dish, combine the self-rising cornmeal and plain cornmeal.
  4. Dip the catfish fillets into the batter, then dredge them in the cornmeal mixture to coat thoroughly.
  5. Carefully place the coated fillets into the hot oil and fry until golden brown and cooked through, about 5-6 minutes per side.
  6. Remove the fried catfish from the oil and drain on paper towels before serving.
