Ingredients

  • 2 eggs
  • 1 tsp water
  • 2 to 3 cups bread crumbs
  • 1/4 tsp crushed red pepper
  • 1/4 tsp black pepper
  • 1/4 cup grated Parmesan cheese
  • 1 tsp finely chopped fresh parsley (optional)
  • 6 colossal shrimp or 12 jumbo shrimp
  • oil for frying

Instructions

  1. Lightly beat eggs and water in a bowl.
  2. Combine bread crumbs, crushed red pepper, black pepper, Parmesan cheese, and parsley in another bowl.
  3. Devein and butterfly the shrimp.
  4. Dip the shrimp in the egg mixture and then in the bread crumbs.
  5. Repeat the dipping process if desired.
  6. Refrigerate the coated shrimp for 30 minutes to 1 hour before frying.
