Ingredients

  • 3 cups zucchini, sliced thin
  • 1 cup Bisquick mix
  • 3 tablespoons Parmesan cheese
  • 1/2 teaspoon parsley
  • 1/2 cup oil
  • 1 large onion, minced
  • 4 eggs, beaten
  • 1/2 teaspoon salt

Instructions

  1. Mix oil, minced onion, beaten eggs, and salt in a large bowl.
  2. Add parsley, Parmesan cheese, and Bisquick mix to the bowl and stir well.
  3. Fold in sliced zucchini until evenly combined.
  4. Pour the mixture into a sprayed glass pie pan.
  5. Bake at 350°F (175°C) for 45 minutes until golden and set.
