Ingredients

  • 1 1/2 c. all-purpose flour
  • 1 tsp. baking powder
  • 1/4 tsp. salt
  • 2 egg yolks
  • 2/3 c. milk
  • 1/4 c. vegetable oil
  • 2 egg whites
  • 3/4 c. chopped pecans
  • 1/2 tsp. maple flavored extract

Instructions

  1. Preheat the waffle iron.
  2. Sift together the flour, baking powder, and salt.
  3. In a separate bowl, whisk the egg yolks with milk, vegetable oil, and maple flavored extract.
  4. Gradually add the wet ingredients into the dry ingredients, mixing until just combined.
  5. In a clean bowl, beat the egg whites until stiff peaks form.
  6. Gently fold the beaten egg whites into the batter.
  7. Fold in the chopped pecans.
  8. Pour the batter onto the preheated waffle iron and cook until golden brown and crisp.
