Ingredients

  • 1 lb. lean ground beef
  • 1/2 c. chopped onion
  • 2 (10 oz.) cans tomatoes
  • 1 (16 oz.) can kidney beans
  • 1 tsp. chili powder
  • 1/4 tsp. cumin
  • 1/2 c. chopped Cheddar cheese

Instructions

  1. Brown ground beef and chopped onion in a skillet.
  2. Add canned tomatoes, kidney beans, chili powder, cumin, and 1 cup of water.
  3. Bring to a boil, then reduce heat and simmer, covered, for 20 minutes or until rice is tender.
  4. Top with chopped Cheddar cheese before serving.
