Ingredients

  • 2 cups white rice
  • 1/3 cup cooking oil
  • 1 small can tomato sauce
  • 1 can Ro-Tel tomatoes and green chilies
  • 1 onion, chopped
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 2 teaspoons salt
  • 1 fresh jalapeno pepper, seeds removed and chopped fine

Instructions

  1. Heat oil in a large skillet.
  2. Add rice and chili powder; stir until rice is clear.
  3. Add chopped onion and cook until they turn clear.
  4. Turn burner to medium heat.
  5. Add tomato sauce and 1 can of water; stir well.
  6. Drain the Ro-Tel tomatoes and green chilies.
  7. Add the drained tomatoes and chilies to the rice mixture.
  8. Add chopped jalapeno and all spices; stir in thoroughly.
  9. Reduce heat to a simmer.
  10. Add water occasionally to keep moist.
  11. Do not let the sauce dry out; simmer for 25 to 35 minutes or until rice is soft.
  12. Let set for 10 minutes before serving.
