Ingredients

  • 3/4 cup chopped onion
  • 2 cups chopped zucchini
  • 1 cup grated carrots
  • 3 cans diced tomatoes
  • 3 cans kidney beans
  • 1 teaspoon garlic salt
  • 2 tablespoons chili powder
  • 1/4 teaspoon oregano
  • 1/4 teaspoon cumin

Instructions

  1. In a large saucepan, cook chopped onion, carrots, and zucchini with 1/2 cup of water for 20 minutes.
  2. Add undrained kidney beans, diced tomatoes, garlic salt, chili powder, oregano, and cumin.
  3. Cook for an additional 30 minutes on medium heat.
